Make An Easy Pasta Substitute Out Of Cucumbers

If I could, I’d eat pasta every single day; I really would. And with all the different ways out there to make lasagna and spaghetti, cavatelli and penne, and everything else, it’d be entirely possible for me to go months without repeating a recipe. I know there are a lot of you out there who share this dream, but we have to be honest with ourselves: actually living it and following that meal plan? It would be pretty disastrous for our health, no matter how healthy we tried to keep the recipes. So what can we do when we get that pasta craving? The answer is easy: grab the cucumbers.

Yes, today OWN’s Healthy Grocery Girl Megan Roosevelt is showing us how to make a healthy pasta substitute out of cucumbers. We’ve had other faux-pasta before – usually made of zucchini – but we never would have thought to use cucumbers, of all things. It turns out, though, that it’s pretty easy. All you to do is julienne. Here’s how.

  1. Wash and peel the cucumber, then julienne it all the way down to the core.
  2. Add the cucumber ribbons to a bowl.
  3. Drizzle with olive oil.
  4. Add some freshly-grated sea salt, and squeeze half a fresh lemon over it.
  5. Toss to coat evenly, and you’re all set!

The resulting cucumber ribbons will spiral onto your fork just like regular pasta noodles. You’ll get the satisfying sensation of eating pasta without any of the carbs.
