Caramel Apple Pie Biscuit Bites

Here’s one sweet way to get your apple a day: cinnamon and brown sugar caramelized apples and flaky bites of buttery biscuit, baked in a skillet and double-drizzled with ooey, gooey salted caramel sauce and icing.

Think of this skillet bake as a hybrid between apple pie and monkey bread that tastes just like a classic caramel apple — but won’t take your teeth out!

Ingredients
4 Tablespoons Unsalted Butter
3 Cups Peeled and Diced Green Apples (2-3 medium apples)
6 Packed Tablespoons Light brown sugar, divided
1½ Teaspoons Ground Cinnamon, divided
1 Egg
1 teaspoon Vanilla Extract
½ Cup Half and Half
1 (16 ounce) can Flaky Layer Biscuits (each biscuit cut into 8 pieces)
½ Cup Salted Caramel Sauce
Icing
1 Cup Powdered Sugar
2-3 Tablespoons Milk or water
Directions
Preheat the oven to 350°F/170°C.
Melt the butter in a 12-inch cast iron skillet (or other oven safe skillet) over medium heat. To the melted butter, add the apples, 1 teaspoon of the ground cinnamon, and half of the brown sugar. Stir to combine. Cook until the sugar dissolves and the sauce bubbles and starts to thicken, about 5 minutes. Remove the pan from the heat and allow it to cool for 3-5 minutes.
Meanwhile, in a measuring cup or a small bowl, whisk together the egg, remaining brown sugar, remaining ½ teaspoon of ground cinnamon, vanilla extract, and half-and-half. Set aside.
Add the biscuit pieces and the egg mixture to the cooked apples, and gently stir to combine.
Bake until the biscuits are cooked and most of the liquid has been absorbed, about 30 minutes. Allow them to cool slightly before drizzling the apples with the salted caramel sauce.
While the biscuits are cooling, make the icing: mix the powdered sugar and milk or water together until smooth. (More liquid will yield a thinner icing, and less liquid will yield a thicker icing). Drizzle the icing on top of the salted caramel layer. Serve warm.

We used tart green apples with a nice zing that cuts through the rich caramel, but from Gala to Fuji, any of your favorite apple varieties will be (golden) delicious.
