This Sweet Potato Toast is Healthy and Delicious

A perfect pre-dinner snack, delicious breakfast, or classy party appetizer is always topped toast. Toast is the ideal blank canvas for any number of flavors; cream cheese and fruit, tomato and mozzarella, avocado and egg are just a few of our favorite toast toppings. Likewise, it’s an appropriate appetizer for just about any occasion.

But what if you’re looking to cut down on carbs? What if you have an food allergy or gluten intolerance? The fastest way to streamline a low-carb or specific diet is by cutting down on your intake of bread, which sadly, means limiting your intake of toast.

A great compromise to still enjoy this fancy and delicious appetizer while maintaining your healthy lifestyle choices, is this sweet potato toast. In this scenario your sliced sweet potato will act as your toasted base.

Sweet potatoes, like toast, are a great base for a whole medley of flavors! The only different is that your sweet potato slices are much healthier and packed with great vitamins and nutrients. They can even be toasted in the same exact way as you regular bread slices.

A quick tip is to be very aware of how difficult sweet potatoes are to cut. I’ve been there, don’t take this task lightly. Mind Over Munch suggests that you scour the potato first, making it easier for the tough skin of the sweet potato to be cut.

Try cutting a big batch of sweet potatoes all at once and storing them in some Ziploc bags; this way you can make these toasted snacks whenever you want without having to cut up a potato every time. However, don’t hold onto these slices for too long, as they will start to go bad over time.
