Slow Cooker Chicken Parmesan Soup

This warm and delicious chicken parmesan soup delivers full flavor and hits the high notes from the plated Italian classic. Chicken Parmesan Chicken Soup

Ingredients:

1 cup diced yellow onion
1 cup diced green bell pepper
3 minced garlic cloves
1 can (14.5 oz) crushed tomatoes
½ cup shredded Parmesan cheese
1 Tbsp chopped fresh basil
½ Tbsp chopped fresh oregano
4 cups chicken broth
1 chicken breast
(1/2-3/4 lb)4 oz uncooked gemelli or penne pasta
Parmesan and optional mozzarella for garnish

Instructions:

1. Combine onion, bell pepper, garlic, tomatoes, cheese, basil, oregano and chicken in a large crockpot. Cover with the lid and cook on high for 3 hours, until chicken is tender.
2. Remove the chicken from the crockpot and shred. Set aside while cooking the pasta.
3. Add the pasta to the crockpot and cook on high 35-45 minutes, or until the pasta is al dente.
4. Stir shredded chicken back in to the soup, taste for seasoning and add salt to taste.
5. Top each serving with fresh chopped basil and additional shredded cheese.
