Slow Cooker Chicken Fajitas

Everyone knows what the sound of sizzling means in a Mexican restaurant: fajitas. These don’t exactly sizzle. Instead they cook away in your slow cooker, freeing you up to do other things like work or catch up on the latest Netflix binge that you’re so behind on. Don’t let Stacey from the office ruin Making a Murder for you because you were too busy slaving away in the kitchen. Instead take 15 minutes in your morning or midday to toss this together and the whole family will think you’re a seasoned master of Tex Mex delights.

1 lb boneless skinless chicken breasts, cut into strips

3 bell peppers, different colors preferably, sliced thinly

3 garlic cloves, minced

1 onion, sliced thin

1 (15oz) can petite diced tomatoes

1 small can chipotle salsa

salt and pepper to taste

sour cream, sliced green onions, and tortillas to serve with.

  1. Combine all of the ingredients in your slow cooker. Cook on high for 3-4 hours or low for 6. If you cook for too long the chicken and peppers will fall apart, they will be delicious still but will not look like the classic fajita style.
  2. Spoon this mix into warm tortillas and garnish as you wish.
