His Trick to Stuffed Squash is 1 Ingredient I Would Have Never Guessed!

You’ll Need

– 2 small to medium (or 1 large) acorn squashes
– 1 onion, chopped
– 2 celery stalks, chopped
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 teaspoon fresh rosemary
– 3 garlic cloves, chopped
– 1/2 pound sausage
– 1 apple, chopped
– 1 cup panko breadcrumbs
– 1/2 cup Parmesan cheese

How To

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Using a sharp knife, cut off the very top and bottom of each squash to create a flat base on each side. Be careful not to cut through the center cavity.
  3. Slice the squash in half and scrape out the seeds to create individual bowls for the stuffing.
  4. Drizzle each squash half with olive oil, salt, and pepper.
  5. Roast the squashes in the oven for 40 to 50 minutes, until fork tender.
  6. While the squash roasts, heat some oil in a large frying pan over medium heat.
  7. Add the onion, celery, salt, pepper, and rosemary, and cook until the onions begin to soften.
  8. Add garlic and sausage, cooking until the sausage is browned on all sides.
  9. Add the apple and cook until slightly softened, then mix in the breadcrumbs and Parmesan cheese until just incorporated. Remove from heat.
  10. Once the squash has finished roasting, remove it from the oven and fill each with the prepared stuffing mixture.
  11. Return to the oven and roast for 20 minutes, adding a sprinkle of Parmesan cheese to the top for the final 5 minutes.
