Rock Your Dessert With Rocky Road Fudge Bars

What’s better than Rocky Road ice cream? This recipe that combine that frozen treat’s chocolate, marshmallows and nuts into sweet, chewy cookie bars. Yoyomax12 shows us how to get the layers of taste.

You’ll Need:

Crust
– 1/2 cup all-purpose flour
– 1/2 cup rice flour
– 1 teaspoon baking powder
– 1 cup granulated sugar
– 1 cup almonds, chopped fine
– 1/2 cup butter
– 2 ounces semi-sweet chocolate chips
– 1 teaspoon almond extract
Filling
– 6 ounces cream cheese, room temperature
– 1/4 cup butter, room temperature
– 1/2 cup powdered sugar
– 1 large egg
– 2 tablespoons all-purpose flour
– 1/2 cup almonds, chopped
– 1/2 teaspoon almond extract
– 1 cup semi-sweet chocolate chips
– 2 cups miniature marshmallows
Topping
– 1/4 cup butter
– 2 ounces cream cheese
– 1 ounce semi-sweet chocolate chips
– 3 1/2 cups powdered sugar
– 1/4 cup evaporated milk or cream
– 2 teaspoons amaretto

How To:

Crust

  1. Combine the flour, rice flour, baking powder, sugar and almonds in a large bowl.
  2. Melt the chocolate and butter together in a small saucepan over low heat. Stir well and add in the almond extract.
  3. Pour the melted chocolate mixture into the bowl with the flour mixture and stir until combined. It will look dry and crumbly.
  4. Press the mixture into the bottom of a greased 9-by-13 inch pan and set aside.

Filling

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine the cream cheese, butter, egg and powdered sugar together. Blend until smooth.
  3. Blend in the almond extract, flour and chopped almonds.
  4. Spoon the mixture over the crust and sprinkle with chocolate chips.
  5. Bake for 25 to 30 minutes until the filling is set and edges are brown.
  6. Sprinkle marshmallows over the top while still hot and put back into the oven for an additional 2 to 3 minutes, until marshmallows are puffy and brown.

Topping

  1. In a large saucepan, place the butter, cream cheese, chocolate and cream. Heat over medium-low heat until melted.
  2. Whisk until smooth.
  3. Add in the powdered sugar and amaretto, and blend until smooth.
  4. Pour the topping over bars while they are still hot out of the oven and swirl a knife through the top to swirl.
  5. Allow to cool completely and cut into bars.
