Make An Explosion of Taste With Red Velvet Lava Cakes

You’ll Need:

– 8 ounces white chocolate
– 2 sticks butter
– 1 cup sugar
– 4 large eggs, room temperature
– 4 large egg yolks, room temperature
– 1 1/2 to 2 tablespoons red liquid food coloring
– 1/4 cup natural unsweetened cocoa powder
– 1/2 teaspoon cinnamon
– 3/4 cup all-purpose flour
– Confectioner’s sugar, for dusting

How To:

  1. Set a rack in the center position of your oven and preheat to 375 degrees Fahrenheit.
  2. Melt the butter and white chocolate in the top of a double boiler, or microwave gently.
  3. In a large bowl, whisk the eggs and egg yolks until they are doubled-in-size and fluffy.
  4. Once the eggs are fluffy, slowly add in the sugar bit by bit. Keep whisking until fully incorporated.
  5. While continuing to mix, add in the red food coloring, vanilla and melted white chocolate mixture.
  6. Sieve the cocoa, flour and cinnamon over the eggs mix.
  7. Using a large metal spoon to preserve the air bubbles, gently fold in the dry ingredients to the batter and stir until just combined.
  8. Butter six small dishes or oven-safe mugs really well.
  9. Divide the batter evenly among dishes/mugs, about 1 cup of batter each.
  10. Place the dishes on a baking sheet and bake for 18 to 22 minutes, until the sides of the cake are set but the centers are still soft.
  11. Let the cakes rest for 5 minutes.
  12. Run a butter knife around the cakes to loosen them, and invert onto dessert plates.

Dust the cakes with confectioner’s sugar and serve immediately with ice cream and white chocolate shavings! One of the best things about this recipe is that the batter can be made up to 4 days in advance, so it’s easy to have some on hand for impromptu celebrations or cravings.
