How to Make Baked Cottage Fries

What kind of French fries are your favorite? Some would say curly, others would say shoestring; some swear by waffle fries and others won’t eat anything other than steak-cut. Today, though, we’re resurrecting a oft-forgotten version, with the help of Food Wishes: cottage fries! Also called, simply, oven-baked potato rounds, these fries are about as simple as it gets, but still incredibly delicious. Check them out and add them to your fry-rotation.

You’ll Need

– 4 baking (russet) potatoes, sliced in ⅜-inch thick rounds
– Salt, to taste
– Freshly-ground black pepper, to taste
– 1 pinch cayenne pepper
– 1 pinch herbs de Provence
– 2 tablespoons oil
