Here’s a Quick and Easy Way to Make an Entire Chicken Dinner in Your Slow Cooker

There are few kitchen appliances we love more than the crock pot. There’s nothing like coming home to a wonderful smell wafting from the slow cooker, and the feeling of knowing that dinner is ready and waiting. While there are so many amazing crock pot recipes out there, we’ve found another one to get excited about: a full chicken dinner!

This recipe from The One Pot Chef not only prepares chicken breasts perfectly; his recipe also cooks potatoes and veggies right along with the chicken. A full chicken dinner has never been easier!

One Pot Slow Cooked Chicken Dinner

Serves 4
Prep Time: About 10 minutes
Cooking Time: 4 hours on High, or 8 hours on Low

You’ll Need

  • 2 pounds (32 ounces or 1 kilogram) chicken breast fillets
  • 19 ounces (1.2 pounds or 600 grams) small red potatoes, quartered
  • 1/2 pound (8 ounces or 250 grams) baby carrots, trimmed and peeled
  • 1/4 cup olive oil
  • 1/3 cup freshly-squeezed lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 2 teaspoons crushed garlic
  • 1 teaspoon salt
  • Freshly-cracked black pepper

To start your chicken dinner, you’ll want to mix up all of the marinade ingredients (oil, lemon juice, oregano, onion powder, garlic, salt and pepper). Then, place your chicken breasts in the slow cooker so that they all touch the bottom. Add quartered potatoes to one side and carrots to the other side. Next, pour that yummy marinade all over the meat and veggies. Pop the lid on, turn the crock pot on (8 hours on low or 4 hours on high), and voila! You’re on your way to a delicious slow cooked dinner.
