Churro Chex Fried Ice Cream

We were so into the cinnamon & sugar flavors of our Churro Chex® Party Mix, we wanted more excuses to enjoy them. So we once again partnered with Chex® and took the concept totally over-the-top by using Rice Chex® as a crispy coating on some insanely delicious Churro Fried Ice Cream.

This impressive homemade dessert is even better than the one you order at your favorite Tex-Mex restaurant. When you crack through that piping hot churro crust into the cool and creamy center, you’ll see just how unreal this treat is.

Churro Chex Fried Ice Cream

Ingredients
1 Quart Vanilla Ice Cream
3 Cups Rice Chex Cereal®, crushed
1 Cup Granulated Sugar
1 Tablespoon Cinnamon
2 quarts Vegetable Oil
Directions
Scoop 8 ½-cup balls of ice cream onto a sheet pan and freeze for at least one hour.
Place the crushed Rice Chex into a shallow bowl. Roll the ice cream balls in the crushed cereal, pressing the cereal into the ice cream balls to cover them completely. Repeat if needed. Return the coated ice cream balls to the freezer and freeze until they're completely firm, about 3 hours.
In a shallow bowl, combine the sugar and cinnamon and stir to mix. Set aside.
In a large saucepan heat the oil to 375°F / 190°C. Using a slotted spoon, gently lower one ice cream ball into the oil. Fry it until it's golden brown on all sides, about 20 - 30 seconds. Remove the fried ice cream from the oil and quickly blot it on a paper towel. Place the fried ice cream into the bowl of cinnamon and sugar, spooning the cinnamon-sugar over the top.
Serve immediately, topped with chocolate sauce, whipped cream and a maraschino cherry. Repeat with the remaining ice cream balls.
Chef Tips
You can dip the ice cream balls into whisked egg whites before you roll them in the cereal to help it adhere more evenly. Place the coated ice cream in the freezer for 30 minutes and repeat the coating process if needed before freezing the ice cream balls

Just grab some Rice Chex® and dig out the ice cream from your freezer. All you have to do is crush up some of that Rice Chex® in a plastic bag, then shake it out onto a plate. Roll some ice cream balls around in all that crunchy yumminess, then fry them up. A dusting of cinnamon sugar, a nice healthy drizzle of chocolate sauce, a dollop of whipped cream, and a cherry (of course) finish off your impressive creation.

Once you serve the Churro Chex® Fried Ice Cream, don’t be surprised if you have to pick some jaws up off of the floor before anyone is able to savor that first delicious bite. One bite in, however, and your guests are sure to agree that this delicious dessert is one for the books, no matter the season!
