Chocolate Banana Bites

I love ice cream but I’ve been searching for something healthier that will satisfy my need for a cool treat late at night and won’t having me regretting it early in the morning. These frozen banana bites are so easy to make and taste divine. Check out the quick video to see how easy they are to make:

Ingredients:

1 1/2 cups bittersweet chocolate chips
2 Tbsp canola oil
1 cup of assorted toppings for coating bananas (suggestions, but feel free to experiment!: roasted almonds, toffee bits, pecans, peanuts, or shredded coconut)
3 ripe bananas, peeled, cut into 1/2-inch-thick slices

Instructions:

1. Melt the chocolate chips with the canola oil in a heatproof bowl in the microwave. It depends on your microwave’s wattage, but in mine it took 1½ minutes at 50% power.

2. Working quickly, dip the banana slices in the chocolate and then roll in the toppings to completely cover the banana. We used shredded unsweetened coconut and chopped roasted almonds, but the combinations of things banana and chocolate go well with are almost endless.

3. Freeze for three hours before eating. Will keep in the freezer in an airtight container for several weeks, if you don’t eat them all first!
