The Best-Ever Stuffed Pepper Has The Tastiest Unexpected Filling

When you think of comfort food, your mind might not go right to vegetables – in particular, peppers. But guess what? Peppers have a decadently delicious side, too! Granted, this might be a slightly healthier comfort food than, say, a juicy burger and a plate of fries, but that doesn’t mean it’s not bursting with flavor. This stuffed pepper recipe in particular has the most surprisingly yummy filling you can imagine: Philly Cheesesteak stuffing. Don’t be fooled by the healthy shell all this roast beef and melted cheese is stuffed into – this is one delicious dish. It actually makes sense if you think about it! A Philly Cheesesteak isn’t complete without the roasted peppers, their savory crunch is my favorite part.

PHILLY CHEESESTEAK STUFFED PEPPERS

INGREDIENTS
– Olive oil
– Onions
– Garlic
– Roast beef
– Provolone
– Bell pepper
– Spices

DIRECTIONS

1. Heat oil up in a skillet.
2. Add onions, garlic, roast beef, and spices to the skillet. Combine.
3. Stuff the roast beef mixture to the bottom of the pepper. Add a layer of provolone.
4. Repeat. A layer of roast beef and a layer of provolone on top of the pepper.
5. Bake for 20 minutes at 400 F. Enjoy!
