– 1 lb. ground beef
– 1 cup onions
– Taco seasoning
– 2 cups chicken broth
– 1 can corn
– 1 can tomatoes
– 1 can black beans
– 1 cup rice
– Diced jalapeno
– 1 cup cheddar cheese


1. Cook ground beef and onions in a medium saucepan until brown.
2. Add taco seasoning and chicken broth. Combine.
3. Add corn, tomatoes, beans, rice, and jalapenos. Combine.
4. Let simmer with the top on for 15 minutes.
5. Cover with shredded cheddar cheese. Combine.
6. Add toppings and enjoy!
