White Cheese Dip

This White Cheese Dip, Queso Blanco, is easy to make and perfect for your next party. All of my friends who have tried this dip love it. Check out the video below to see how easy it is to make:

Ingredients:

1 Tbsp butter

1 Tbsp all-purpose flour

1/2 cup of whole milk (add a Tbsp more if you want it thinner)

1/2 lb white American cheese, shredded (you can find this at the deli

counter- I just asked them to cut an eight ounce chunk for me)

1 (4 oz) can of chopped hot green chiles

¼ tsp cumin

½ tsp garlic salt

optional pinch of cayenne pepper if you want it spicier

optional garnish with 1 diced roma tomato and sliced green onion/scallion

Instructions:

1. Melt the butter in a medium-sized saucepan over medium heat. Add the flour and whisk together to form a thick paste. Let it cook for a minute or two just until a light blond color, then slowly start adding the milk in a steady stream- don’t add it all at once or you will end up with a pot of milk and flour lumps. Once the sauce starts to thin out, you can add the rest of the milk.

2. Add the shredded cheese a little at a time, whisking constantly and only adding more cheese once the previous handful has melted into the sauce.

3. Once all the cheese has melted, stir in the chiles, cumin, garlic salt and cayenne pepper.

4. Pour the finished cheese dip into a serving bowl, then garnish with the chopped tomato and green onion. Serve with tortilla chips, bread, and/or carrot sticks.
