Wake Up With English Muffin Egg Pizzas

Pizza isn’t just for lunch and dinner anymore. With this cute little recipe, you can have pizza for breakfast. We love this quick recipe idea from Real Simple. Apart from looking delicious and relatively healthy, it’s also the perfect breakfast to help you use those leftover hard-boiled eggs from Easter!

What You Need:

-4 English muffins
-olive oil
-tomato slices
-2 hard-cooked eggs, sliced
-grated mozzarella
-oregano
-kosher salt

What You Do (to make 4 servings):

  1. Turn oven on to broil.
  2. If you don’t already have leftover hard-boiled eggs, make some!
  3. Toast 8 English muffin halves, then place them cut side up on a baking sheet.
  4. Drizzle each half with olive oil. Then add a tomato slice to each half. Top tomato with hard cooked egg slices (about half an egg for each pizza). Finish with a topper of shredded mozzarella and salt and oregano to taste.
  5. Broil in the oven for about 5 minutes, or until the cheese melts.
  6. Enjoy!
