The Baking Staple That’s About to Get a Lot More Expensive

Americans love butter. That’s a fact. But even though butter consumption is up, butter prices will also soon be on the rise. Here’s why:

This year cows in the United States produced less milk than in past years, and the amount of butter stored in refrigerated warehouses ready to ship was 42 percent lower this summer than the summer of 2013.
To add insult to injury, the milk that the cows did produce on average had a lower fat content. And when the cost of milk that’s higher in fat goes up, butter prices are sure to follow suit.
