Sweet and Salty Cookie Dough Pretzel Bites

Now here’s the perfect combination of sweet and salty when you just can’t decide what you’re craving. These little bites look like a little piece of heaven. And the fact that they’re so small and portable makes them the perfect afternoon snack when you need a little pick-me-up. Is This Really My Life has the tasty recipe for us:

What You Need:

1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup sugar
2 Tbsp milk
1 tsp vanilla
1 1/4 cups flour
1/8 tsp salt
1/2 cup mini semi-sweet chocolate chips
40-50 pretzels
8 oz semi-sweet chocolate chocolate chips
1 tsp shortening, optional

What You Do:

  1. Line your baking sheet with parchment paper.
  2. Beat butter and sugars together on medium speed in a stand mixer. Continue until mixture is light and fluffy. Add in milk and vanilla and mix well.
  3. A little at a time, add in flour and salt. Mix on medium speed until completely combined. Fold in the mini chocolate chips.
  4. Using 1 – 1 1/2 tbsp of dough at a time, roll into small balls. Then place each dough ball between 2 pretzels. Place completed cookie dough pretzels on the baking sheet.
  5. Once out of dough, place baking sheet in the freezer for 20 minutes.
  6. Meanwhile, melt chocolate chips and shortening in a microwave-safe bowl for about a minute, pausing to stir every 20 seconds or so.
  7. After pretzels are done chilling, dip them halfway into the melted chocolate. Then return the bites onto the baking sheet and refrigerate to set for at least 10 minutes.
  8. Cover and store pretzel bites in the fridge for up to 5 days or in an airtight container in the freezer for up to 2 weeks.
