Sweet and Salty Cookie Dough Pretzel Bites
Now here’s the perfect combination of sweet and salty when you just can’t decide what you’re craving. These little bites look like a little piece of heaven. And the fact that they’re so small and portable makes them the perfect afternoon snack when you need a little pick-me-up. Is This Really My Life has the tasty recipe for us:
What You Need:
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup sugar
2 Tbsp milk
1 tsp vanilla
1 1/4 cups flour
1/8 tsp salt
1/2 cup mini semi-sweet chocolate chips
40-50 pretzels
8 oz semi-sweet chocolate chocolate chips
1 tsp shortening, optional
What You Do:
- Line your baking sheet with parchment paper.
- Beat butter and sugars together on medium speed in a stand mixer. Continue until mixture is light and fluffy. Add in milk and vanilla and mix well.
- A little at a time, add in flour and salt. Mix on medium speed until completely combined. Fold in the mini chocolate chips.
- Using 1 – 1 1/2 tbsp of dough at a time, roll into small balls. Then place each dough ball between 2 pretzels. Place completed cookie dough pretzels on the baking sheet.
- Once out of dough, place baking sheet in the freezer for 20 minutes.
- Meanwhile, melt chocolate chips and shortening in a microwave-safe bowl for about a minute, pausing to stir every 20 seconds or so.
- After pretzels are done chilling, dip them halfway into the melted chocolate. Then return the bites onto the baking sheet and refrigerate to set for at least 10 minutes.
- Cover and store pretzel bites in the fridge for up to 5 days or in an airtight container in the freezer for up to 2 weeks.
