It’s Too Hot to Bake a Cheesecake. Make This No-Bake Strawberry Cheesecake Instead!

Summertime doesn’t cure our sweet tooth or curb our dessert cravings, but it does severely lower our desire to turn on our ovens and bake things. That doesn’t mean that we’re limited to store-bought treats or ice cream, though. Instead, we’re turning to our supply of no-bake recipes, and there’s none better than cheesecake! Even better, since it’s strawberry season, this one from Gemma’s Bigger Bolder Baking makes perfect use of the fresh berries for a fruity delight like no other. Since it’s made with neither eggs nor gelatin, it’s also a great option for vegetarians! Honestly, does it get any better? Watch how it’s made and whip up the perfect summer dessert for yourself.

You’ll Need

– 3 cups (11 ounces) graham crackers
– 1 cup butter, melted
– 3 cups (14 ounces) strawberries, hulled
– ⅓ cup sugar
– 1 ½ cups whipping cream
– 3 cups cream cheese
– Extra strawberries, for decoration

How lovely and simple is THAT? We love that all you need to make it is a food processor and springform pan. If you’d like the full, printable recipe, it’s available over on the Bigger Bolder Baking site. Have you ever made a strawberry cheesecake like this one before?
