The Secret Behind the Best Roasted Potatoes Ever

We all know you can season potatoes on the outside with pretty much any seasoning we enjoy. But did you know there’s a way to season potatoes from within? One of the best tricks for releasing powerful flavor from your potatoes is to cook them in water and vinegar first. Simply mix a cup of white distilled vinegar and a tablespoon of salt. Make sure you add enough water to easily cover the potatoes and boil for a good 20-25 minutes. Keep checking your potatoes with a fork. You’ll know when they’re done when you can easily push your fork through.

To kick your potatoes up another notch throw some butter into a skillet and heat until it melts. Add in Kosher salt and pepper, then add in your potatoes turning them over again and again until they get nice and golden which typically takes 8-10 minutes. You can garnish with fresh chopped chives.

I often bring this dish to family pot luck dinners and they’re always a hit. The Vinegar really brings out the flavor of the potatoes bringing them to a whole new level. The extra butter and salt bath at the end never fails to make my mouth water.

-2 pounds baby Yukon Gold potatoes, halved (or quartered if large)
-1 cup + 2 Tbsp distilled white vinegar
-1 Tbsp kosher salt, plus more
-2 Tbsp unsalted butter
-2 Tbsp chopped fresh chives
-Flaky sea salt
-Freshly ground black pepper
