Who says healthy breakfasts have to be boring or complicated? This simple recipe is a twist on a dish you already love, with an extra dose of color and health. Instead of chopping up veggies to cook in your scrambled eggs, try baking those eggs inside that veggie for the perfect balance to start your day— or, in this case, cook them inside (what is technically) a fruit. – Parmesan cheese
You can also add salt and pepper, if you wish! Whip up the scrambled eggs, add the cheese, pour into the tomato and then bake at 425 degrees for about 25 minutes.
