– 1/2 cup sugar
– 2 tablespoons lemon juice (from 1 lemon)
– 3/4 teaspoon coarse salt, plus more for top
Caramel
– 1 cup sugar
– 4 tablespoons unsalted butter
– 1/4 cup heavy cream
– 1 1/4 teaspoons coarse salt
Pate Brisee Crust
– 1/4 cup all-purpose flour, plus more for dusting
– 1 large egg, beaten
– Fine sanding sugar, for sprinkling, optional
Toppings
– Vanilla ice cream, for serving
– Flaky sea salt, for serving, optional
