3 Cups Diced Fresh Pinapple (1 whole pineapple )
3 Cups Diced Cucumber (1 large english cucumber)
3 Tablespoons Olive Oil
4 Tablespoons Lime juice (juice of 2 limes)
1 Tablespoon Lime zest (Optional) (zest of 2 limes)
1/4 Cup Chopped Mint (1 small bunch of mint)
To taste Kosher Salt (Optional)
Directions
In a large bowl, add diced pineapple, diced cucumber, olive oil, mint, lime juice, lime zest, and salt, if using. Mix everything well to coat and serve immediately or refrigerate until ready to serve.
