Chef Tips
The recipe for this salad is a good starting point, but it can be customized to suit your tastes or mood. Try adding different herbs like cilantro or basil. Jalapeños, jicama, avocado, tomatoes, and onions would all make great additions to this salad.

Feeling a little fancier than this simple salad? Then you’re in luck! This pineapple-and-cucumber combo is the perfect foundation for making more elaborate dishes— but only if you’re in the mood. Whatever your craving, this salad is going to taste great.

Of course, if you need suggestions, we’ve got a bunch! Try cilantro instead of mint. Get some cheese involved with some crumbled feta or queso fresco. Make it a more substantial main-dish meal by adding salad greens, grilled pork, or shrimp. The sky’s the limit, so use your favorite flavors and imagination.
