Piña Colada Fluff

This fun and retro dessert salad might be the easiest treat you’ll ever whip up — and definitely will be the talk of the potluck or pool party.

Piña Colada Fluff is kind of like the dessert version of our favorite “dump and bake” recipes minus the baking step: just stir together crushed pineapple, vanilla pudding mix, whipped cream, mini marshmallows, pecans, and coconut. It’s a total dream.

Somehow this fun and fluffy treat manages to be lighter than air and yet creamy, nostalgic and yet fresh and unique. A dash of rum extract makes it taste just like you’re sipping on a real piña colada, but without the alcohol so it’s kid-friendly (and kids love this stuff).

Ingredients
1 (3.4 oz) package Vanilla Pudding Mix
1 (20 oz) can Crushed Pineapple
1 (8 oz) Tub Prepared Frozen Whipped Cream, thawed
¾ Cup Pecans, toasted & chopped (plus more for garnish)
1 Cup Sweetened Shredded Coconut (plus more for garnish)
2 Cups Mini Marshmallows
1 teaspoon Rum Extract
Fresh Pineapple (Optional), peeled and sliced (for garnish)
8 Maraschino Cherries (Optional)
Directions
In a large bowl, combine the pudding mix and crushed pineapple. Mix until well combined.
Fold in the whipped cream, pecans, coconut, marshmallows, and rum extract.
Transfer to a serving bowl and garnish with pecans, coconut, pineapple wedges, and maraschino cherries. (Or garnish individual servings.) Refrigerate until ready to serve.

We garnished ours with fresh pineapple slices and maraschino cherries, but this treat is so tropical, you may find yourself wanting a tiny umbrella to go with your fluff.
