Perfectly Light and Bright Rainbow Cookie Parfaits

You’ll Need:
– 1/3 cup shortening
– 1/3 cup butter
– 3/4 cup white sugar
– 1 egg
– 1 teaspoon vanilla
– 3/4 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– Food coloring
– Sprinkles
– Sweetened whipped cream or Cool Whip topping
How To:
- Preheat your oven to 350 degrees Fahrenheit. Line a muffin tin with muffin liners.
- Cream together the shortening, butter, sugar, egg and vanilla until light and fluffy.
- Blend in the baking powder and salt.
- Gradually blend in the flour until fully combined. Bring together into a ball of soft dough.
- Divide into six portions and tint each portion with food color.
- Using a cookie scoop or other spoon, place portions of the dough into muffin tins lined with muffin liners.
- Bake for 15 minutes, until the edges are light brown and a toothpick inserted in the center comes out clean.
- Allow to cool completely.
- Crumble the cookies into a bowl, one for each color.
- Alternate layers of the cookie crumbs and whipped cream in clear cups or containers. Use an icing bag to pipe in the whipped cream.
- End with a cream layer and decorate with sprinkles if desired.
- Refrigerate until serving time.
