Peanut Butter Banana Bonbon Popsicles
Were you a big fan of peanut butter and banana sandwiches growing up? Then these tasty popsicles are going to be a delicious nostalgic treat for you with a chocolatey twist. Get ready to impress your family with these tasty bonbon popsicles.
Ingredients:
-3 ripe and large bananas
-About 1/2 cup creamy peanut butter
-10 ounces semisweet chocolate chips
-2 tbsp coconut oil
-1/3 cup finely chopped honey-roasted peanuts
-Small popsicle sticks (or pretzel sticks)
Here’s what you do:
- Peel your bananas and slice them into medium-thick (about 1/3″ thick) slices.
- Spoon your peanut butter into a piping bag fitted with a small star-tip attachment. Pipe about a tsp of peanut butter into the cut edge of half of the banana slices. Use plain bananas to sandwich the bananas with peanut butter.

To insert the popsicle sticks (or pretzel sticks, as one of my Instagram followers suggested for a delicious alternative) into the banana sandwich, place your thumb and index finger over and around the banana sandwich. Firmly press the stick into and through the banana slices, but use your thumb and index finger to hold the top banana slice in place during the pressing. This will help ensure that the peanut butter doesn’t ooze out of the sides.
- Place the pops on a baking sheet that’s been lined with parchment paper. Flash freeze for at least 30 minutes.
- While you wait for the pops to harden, bring 2 inches of water to a simmer in a saucepan. Place chocolate chips and coconut oil in a medium heat-proof bowl. Put this bowl over the simmering water. Stir chocolate and coconut oil together until they melt completely.
- Move the chocolate mixture to a glass with mouth that’s wide enough to dunk in the banana sandwiches.
- Once they are hardened, dunk each banana sandwich completely into the chocolate. Return each sandwich to the parchment paper immediately and sprinkle with honey-roasted peanuts.
- Once all bananas have been chocolate dipped, return the baking sheet to the freezer for at least 2 hours. Serve or wrap individually and serve.
