One Delicious Salad That Has 10 Super Foods

Looking for a salad that packs an incredibly healthy punch? Then tabouli is an excellent option. If you’ve never heard of it, it’s a traditional Lebanese salad that is actually ranked as one of the healthiest dishes around. Mind Body Green has a great recipe that utilizes an impressive combination of super foods. Check it out:

Here’s what you need (with super foods bolded):

-2 large bunches of parsley chopped
-1 seedless cucumber, peeled and diced
-Roma tomatoes, diced
-1 small red or yellow onion, chopped
-1 clove of garlic, crushed
-Several leaves of fresh peppermint, chopped
Bulgur (cracked wheat) OR quinoa for a gluten-free option (amount varies depending on your preference)
Olive oil (just enough to spray over the salad)
-Fresh lemon juice of one lemon (or more), squeezed
Allspice (to taste)
-Sea salt (to taste)

And here’s what you do:

  1. Finely chop the onion. Pour salt and allspice over chopped onion, mixing well.
  2. Meanwhile, soak bulgur in warm water for 20 minutes, then squeeze out excess water. (You can also soak in lemon juice instead). If using quinoa, cook as directed.
  3. Chop and dice up remaining ingredients and spray with olive oil.
  4. Toss everything together and enjoy with pita bread or over Romaine lettuce leaves.
