How to Make Mini Corn Dogs in Your Mini Muffin Tin

The only thing that screams easy summertime eating more than a hot dog? A corn dog! Still, while they might be easy to eat, corn dogs can get a little messy and even a little tricky to make. So what to do if you and your kids get a craving? Making these mini corn dog muffins! They’re fun and totally delicious, and your family will have fun making them together and eating them together.   • ½ cup stone-ground yellow cornmeal
  • ½ cup all-purpose flour
  • 3 tablespoons sugar
  • ½ heaping teaspoon fine salt
  • ½ teaspoon baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 3 tablespoons butter, melted
  • Eight 6-inch all-beef hot dogs, ends trimmed, cut into fifths
  • 3 tablespoons dill pickle relish
