How to Preserve Summer Produce Without Canning
Summer is full of amazingly delicious produce that unfortunately isn’t great year-round. However, with a few preservation tips, you can make those fruits and veggies work in other seasons as well. Take a look at some creative ideas:
- Berries: a great way to preserve the flavor of your berries is to create a shrub syrup that you can use in sodas, cocktails and salad dressings. You could also try your hand at making a Berry Vinegar.
- Cucumbers: make your own refrigerator pickles! Just try this recipe for pickling brine or try Marissa McClellan’s recipe for Garlic Dill Refrigerator Pickles. You can use the same process for things like green beans, okra and summer squash.
- Peaches: you can make a delicious freezer jam when you preserve peaches. It’s perfect for things like peach pie any time of year.
- Tomatoes: you can easily freeze whole or chopped tomatoes to use year-round in sauces and stew. Or you can make your own tomato paste.
