How to Make a Loaded Baked Potato Casserole
Baked potatoes are a delicious side dish that can be whipped up easily. But if you’re a huge fan of baked potatoes, why not make a meal out of them. This creative idea from Delicious As It Looks takes the idea of baked potatoes and transforms it into a hearty, comforting casserole that can be served any night of the week.
What You Need:
3 – 4 medium russet potatoes, scrubbed and diced
(about 1 1/2 lbs. or 4 1/2 cups)
1 lb. boneless, skinless chicken breasts, diced
4 slices bacon, cooked crisp, cooled and crumbled
1 1/2 cups shredded cheddar cheese
4 green onions, sliced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup heavy cream
2 tablespoons unsalted butter, cut into small pieces
What You Do:
- Preheat oven to 350 degrees, then lightly grease a 9×9″ baking pan or casserole dish.
- Spread a layer of diced potatoes in the bottom of the pan. Top with an even layer of chicken breasts.
- Season the chicken layer with 1/4 tsp each of salt and pepper. Then, sprinkle on bacon crumbs, 1/2 cup of the cheese, and half of the green onions.
- Spread the remaining diced potatoes in a layer on top. Then top with the remaining bacon, 1/2 cup of cheese, remaining green onions and 1/4 tsp each of salt and pepper.
- Pour heavy cream over the top of your casserole, then dot with the small pieces of butter.
- Cover with aluminum foil and bake in oven for 1 hour. Uncover, then bake for an additional 30 minutes.
- In the last few minutes of baking, sprinkle the top of the casserole with the remaining 1/2 of cheese. Bake until the cheese melts.
- Serve warm and enjoy!
