How to Make a “Happy Sauce” for Veggie Bowls or Bread Spreads
If you’re looking for a quick spread for bread or a delicious topper for a veggie bowl, then you have to try this “Happy Sauce” courtesy of the Kitchn. It’s called Romesco sauce. It’s delicious and super easy to make. Take a look:
Here’s how it’s done:
Just roast a red pepper or two over the grill or stove burner (see how here). You can also use jarred red peppers instead. Then blend them in a food processor with a drizzle of olive oil, a few cloves of garlic, a handful of almonds, and a generous pinch of smoked paprika.
Blend until creamy, and taste. Add salt to taste. Adjust the amounts of the other ingredients; like pesto, this is not a hard and fast recipe. It’s a loose formula for you to adjust to taste.
When you’ve got your Romesco sauce, just spread it onto same bread or top onto a bowl of rice or veggies. You could even use the sauce tossed with chicken.
