Who says breakfast has to be boring? Just because it’s the first meal of the day doesn’t mean you have to skimp on spice and flavor, even if you’re making something as basic as a pancake. Who better than Gordon Ramsay to show us how to take the typical potatoes and pancakes and turn them into a savory, spicy dish that’s the perfect way to start the day? Watch what he does and then get cooking!

You’ll Need

Spicy Pancake
– 1 to 2 teaspoons cumin seeds
– Olive oil, for frying
– 1/2 to 1 green jalapeño, deseeded and finely chopped
– 2 garlic cloves, peeled and finely sliced
– One piece of fresh ginger root, about 1 inch (3 centimeters) in size, peeled and finely chopped or grated
– 1 cup + 1 tablespoon (125 grams) all-purpose flour
– 1 large egg
– 1 1/8 cup + 1 teaspoon (275 milliliters) whole milk, plus 1 to 2 tablespoons reserved
– Sea salt
– Freshly-ground pepper
Potato Filling
– Olive oil, for frying
– 1 teaspoon mustard seeds
– 1/2 onion, peeled and thinly sliced
– 1 teaspoon ground turmeric
– 4 to 6 cold, peeled boiled potatoes, roughly chopped
Dipping Sauce
– 6 tablespoons natural yogurt
– 2 tablespoons chopped coriander
