Game Day Snack: Baked Parmesan Hash Brown Cups

These little hash brown cups look like the perfect snack for adults and kids alike to munch on throughout game day (or any day). And since they’re made in muffin pans, they make for great single servings. Averie Cooks shares their delicious recipe:

Here’s what you need:

-4 cups grated white potatoes (about 2 large peeled potatoes)
-2/3 cup grated parmesan cheese
-1/2 cup Panko breadcrumbs
-3 to 4 tbsp. olive oil
-3/4 tsp salt
-3/4 tsp ground pepper
-onion or garlic powder, to taste
-ketchup, sour cream, or other favorite condiment for dipping/serving

And here’s what you do:

  1. Preheat your oven to 350 degrees.
  2. Spray a non-stick muffin pan well with cooking spray, or grease and flour. Set pan aside.
  3. Add all ingredients (other than ketchup or sour cream) to a large bowl and toss gently to combine. Here’s a quick not from Averie Cooks about the potatoes:

    I grated them by hand on the coarsest blade of a box grater. Every cup or so of grated potatoes, place potatoes inside double or triple layered paper towels and wring out very well over the sink. The drier the potatoes are, the crispier the hash browns will be.

  4. Fill muffin cups with mixture, then bake for about 40 minutes, until edges are lightly golden and set. You’ll want to start checking cups at around 30 minutes.
  5. Allow hash brown cups to cool for about 10-15 minutes in the muffin pan on top of a wire rack. Use a knife to loosen sides and remove cups to a serving plate. Serve with condiment of choice.
