Fresh Cranberry Relish
Cranberry relish is an abolute must on our Thanksgiving dinner table. I absolutely love it on turkey and stuffing. Cranberries are naturally tart so the key is to balance that tartness with sugar and orange juice. You could also add another sweet juice like pineapple or apple.
Cranberry Relish
Ingredients
- 2 oranges
- 1 cup sugar
- 2 teaspoons lemon juice
- 2 teaspoons fresh ginger, cut fine/li>
- 1 bag (12 ounces) fresh or frozen cranberries
- 1/4 teaspoon of pepper to balance out flavor
Instructions
- Zest the peel of one orange. Make sure to zest orange part only as white part is bitter and will make the relish a bit more bitter. Squeeze juice from both oranges into a bowl.
- Combine sugar and lemon juice in a small pan. Heat slowly and continue cooking until the sugar begins to caramelize. Be sure to keep the sugar from burning by adding small amounts of water.
- When the sugar is caramel colored, add ginger and orange zest. Cook for about 1 minute, then add the cranberries and orange juice. Continue to cook on medium-high heat, stirring frequently, for about 5 minutes or until the cranberries are slightly broken but not mushy. Add 2-3 minutes if using frozen cranberries. Remove from heat and leave to cool.
