How to Make Delicious Roasted Fondant Potatoes

Can we get enough of potato recipes? I’ll answer that – no. Some may disagree, but I consider potatoes the superhero of food. They can make sides, garnishes, appetizers or even make up an entire meal! To add to your lengthy list of potato recipes is these crusty, roasted fondant potatoes. Popular in European culture, these fondants take a bit more time than, say, instant mash potatoes. But if you’re looking for a flavorful dish to impress or a culinary challenge, these fondant potatoes are for you.

 

 

Ingredients

  • 2 tbsp vegetable oil
  • 3 large russet potatoes (other varieties will not work as well)
  • salt and pepper to taste
  • a knob of butter (a 2 or 3 tablespoon size chunk)
  • 4 thyme sprigs
  • 1/2 cup chicken broth or stock, more if needed

Roast at 425 F until tender, this will take about 30 minutes. Like I said, this isn’t “2 minutes on HIGH” in the microwave, but it will result in tender potatoes with unbelievable flavor!
