Vinaigrette Ratios: when making a simple vinaigrette, just remember to use 3 parts oil to 1 part vinegar. You can also think of using 1 tablespoon of oil to 1 teaspoon of vinegar. As far as oils go, you can use olive or vegetable oil, or red wine, white wine or balsamic vinegar. Try adding the following to your mixture:
- Fresh or dried herbs like basil, tarragon, rosemary, etc.
- Dijon mustard
- Salt and pepper
