How to Make an Easy and Beautifully Bubbly Focaccia Pizza

People of the kitchen! If you’re looking for another homemade recipe to add to your quarantine cooking stash, then say no more. This focaccia pizza from Chef Gemma Stafford from Bigger Bolder Baking is one for the books—and your taste buds.

Pizza from scratch can sometimes seem like a burden. It’s easier to just pick up the phone and order a greasy pie from your favorite takeout joint, no?

But that’s just it—pizza can make us feel bloated and just overall yucky. When you make it yourself, you know exactly what’s going into it, so you can make it healthier and up to your standards. Plus, there’s a sense of pride when it comes to cooking the world’s favorite food right in your oven.

And guess what? It doesn’t even have to be as difficult as you might think it is. This recipe not only calls for just a handful of ingredients, there’s no dough kneading required—no bread machine or mixer required. Plus, it has a thick, chewy crust no the bottom, just like it would if you picked up a pie form the restaurant down the road.

Another great thing about this recipe is that it’s completely versatile—you can make it just how you’d like, with any of your favorite toppings.

For the dough, all you need is flour (all-purpose is fine, although you can choose to use bread flour if you’d like), salt, yeast, water, and olive oil—that’s all! To get it that thick, chewy texture we all love, just let it ferment overnight and it will do the work for you.

The hardest part about the recipe is probably shaping the dough into your pan—it can be a little tricky, but once you get the hang of it, it’s not so bad. After you get that in, Gemma has a cool trick for covering the dough and letting it sit: Just plop a shower cap over it!

After a few hours, bubbles will form and flavor will marinate. At that point, you’re ready to “dimple” the bread (MUCH easier than kneading, trust us) and add on your sauce, cheese and toppings. Gemma uses pepperoni, but like we said, you can put any topping you please.
