Deliciously Cheap Vegetable Soup

I love soup in the winter, and as a single person who doesn’t like to cook, I can eat on it for a couple of days.

I used to make a big production out of vegetable soup preferring to use oxtails as a base until the price of them shot up to almost unaffordable. One day I wanted soup but didn’t want to go grocery shopping.

I boiled water with one chicken bouillion cube for each of about 4 cups of water, added chopped onion and about 3 stalks of celery,a bag of frozen mixed vegetables, a can of diced tomatoes and a can of white beans (drained). I add three magical spices to almost everything I make. I call them my 3 C’s — cumin, curry and coriander. They make all the difference in the world, especially the coriander. The mixture simmered until the celery and onion were cooked, and voila! Deliciously cheap vegetable soup.

I’ve been making this concoction about every other week. I can’t seem to get enough of it. What’s more, it’s really good for you.
