When you think of comfort food, your mind might not go right to vegetables – in particular, peppers. But guess what? Peppers have a decadently delicious side, too! Granted, this might be a slightly healthier comfort food than, say, a juicy burger and a plate of fries, but that doesn’t mean it’s not bursting with flavor. This stuffed pepper recipe in particular has the most surprisingly yummy filling you can imagine: Philly Cheesesteak stuffing. If that doesn’t tempt you to watch the video below, I don’t know what will.

Don’t be fooled by the healthy shell all this roast beef and melted cheese is stuffed into – this is one delicious dish. It actually makes sense if you think about it! A Philly Cheesesteak isn’t complete without the roasted peppers, their savory crunch is my favorite part.

Trust us, you will never look at bell peppers the same after this recipe.
