Best Ever Oven Fried Chicken

I love fried chicken but it doesn’t love me back. Ok, maybe it loves me so much that’s why it never wants to leave my hips. Well my on and off again relationship with fried chicken may be on hold indefinitely now that I’ve learned how to make the best “oven fried” chicken ever. It’s so good that I also use this method on turkey and pork chops too! A little secret, oven fried isn’t fried at all. It’s baked, which means no oil, which in turn means much much less fat. And yet all the crunch is still there. It’s a win win! And it’s super easy. No greasy mess to clean up and my apartment doesn’t smell like a fast food joint. I’m hooked. These go especially well with some extra mayo and bread and butter pickles on a sandwich.

Best Ever Oven Fried Chicken

1-2 pounds chicken tenders

1 cup mayonnaise

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper

2 cups panko bread crumbs

1/2 cup fresh grated parmesan

  1. Preheat your oven to 400°F. Line a baking tray with parchment paper and an oven safe cooling rack if you have one. If you don’t that’s fine too. Spray the cooling rack with non stick spray.
  2. Stir together the mayo and spices. Mix the parmesan into the panko bread crumbs.
  3. Coat each chicken tender into the mayo mixture and then toss in the cheese and panko. Place them out flat on the baking tray.
  4. Bake for about 20 minutes or until the chicken is cooked through out and a thermometer registers at 165°F.
