4 Ways to Use Lettuce When You’re Sick of Salad

It’s easy, when buying or growing lettuce, to have extra that goes bad before you can use it. In most cases, that’s because lettuce usually only gets used in salads. Serious Eats has come up with some other, nontraditional recipes involving lettuce that should help you waste less. When you’re sick of salad, try out some of these alternatives.

  1. Lettuce Soup: a puree of lettuce, potato, onion and chicken stock seasoned with parsley, nutmeg and lemon, fortified with a touch of cream can make for a great soup that can be reheated throughout the week.
  2. Grilled Romaine with Simple Blue Cheese Dressing: super easy and delicious recipe. Remove several layers of outer leaves from a head of romaine. Halve the lettuce lengthwise, leaving the core in place to hold the leaves of each half together. Rub some olive oil and sprinkle salt on pieces and grill on medium heat for about a minute on each side. Serve lettuce with some thinly sliced red onions and dressing.
