3 Decadent Potato Salads That Don’t Contain Mayo

A picnic isn’t complete without potato salad, but sometimes the traditional mix of cubed potatoes and mayonnaise just doesn’t cut it. It can get pretty boring, and all that mayo just isn’t good for us— and after it sits out in the hot sun for awhile, it doesn’t taste all that great either. That’s why we were so excited to find these recipes from The Domestic Geek! Not only is she shaking up the taste of potato salad, she’s making THREE of them without any mayo in sight. To get each of these delicious mayo-free salads, mix together the following flavor combos:

CREAMY CUCUMBER POTATO SALAD
– 4 to 6 white potatoes, chopped and cooked
– 1 English cucumber, seeded and chopped
– ½ red onion, finely sliced
– 1 cup yogurt
– 1 clove garlic, minced
– ½ lemon, zested and juiced
– 2 tablespoons fresh dill, chopped
– Salt and pepper
LOADED BAKED POTATO SALAD
– 4 to 6 red skin potatoes, chopped and cooked
– 6 slices bacon, cooked and chopped
– ½ cup cheddar cheese, shredded
– 3 green onions, finely chopped
– ½ cup sour cream
– ½ teaspoon garlic powder
SOUTHWESTERN SWEET POTATO SALAD
– 2 large sweet potatoes, peeled and cooked
– 1 red bell pepper, chopped
– 1 cup roasted corn
– ½ red onion, finely diced
– 1 can black beans, rinsed and drained
– ¼ cup cilantro, freshly chopped
– 2 to 3 limes, zested and juiced
