25 Yummy Ways to Make Use of Chicken Stock
Chicken stock is integral to a lot of recipes, but once you open up a box or can, it doesn’t last for too long in the fridge. I don’t know about you, but I always find myself with more chicken stock than I know what to do with. So I was excited when I found this post from Wise Bread. Not only does it feature a couple of homemade chicken stock recipes, but it has 25 ideas for using up chicken stock in delicious ways. Take a look at some of them:
- White Rice: want to add some flavor to plain rice? Simply substitute chicken stock for water when making it.
The general rule for cooking long-grain white rice is two parts liquid (water or stock) to one part rice. Bring the stock to a boil, add 1/4 teaspoon salt, 1 tablespoon butter (optional), and 1 cup rice; simmer, covered, for about 15 minutes until all liquid is absorbed.
- Low-Fat Alfredo: you can make a creamy sauce that’s not as sinful as traditional Alfredo with the help of milk, chicken stock, flour, salt and pepper. Use this recipe or just combine the ingredients, add in your cheese and you’re good to go.
- Gazpacho: here’s a cool one to try this summer on an especially hot day. Gazpacho is a cold, refreshing soup that can be made with chicken or beef broth and stored in the fridge for up to five days.
- Mashed Potatoes: when making mashed potatoes from scratch, just substitute one cup (more or less) of chicken stock for the butter and cream. This will still give you a tasty side dish – just with fewer calories and less fat.
- Gravy: gravy is a frugal favorite since it can be made from leftover pan-drippings of and for the meat that you cook. You’ll only need a few ingredients for a simple gravy, including the stock:
To end up with about two cups of gravy, you’ll need about two tablespoons of drippings. Add two tablespoons of cornstarch or flour to the drippings in a pan over medium-high heat, and slowly whisk in about two cups of stock. Once thickened (about five minutes), add salt and pepper to taste, remove from heat, and serve.
