2 Great Ways to Use Up Leftover Mashed Potatoes

We Tip Heroes love to make second (and even third) meals out of leftovers. It’s a great way to save money and keep from being bored with eating the same food for several nights. Here are a couple of creative ideas for leftover mashed potatoes (which are in season, by the way!), courtesy of Frugal Village.

Make Potato Patties:

Just add an egg to 2 cups of mashed potatoes. Then form the mixture into patties and fry them up in a pan with a little oil. You could also add seasoned breadcrumbs, cheese or onion for some added flavor.

Potato Soup:

This suggestion comes from Frugal Village reader, Daisy. Just thin down your leftover mashed potatoes with some milk or water until you get it to your desired consistency. Gently bring this mixture to a boil, then top with bacon, cheese, chives and sour cream.
