Strawberries in a salad? Don’t question it — you definitely won’t after you take a bite of this stunning salad featuring the best of summer produce: ripe strawberries, crunchy cucumbers, fresh mint, red onion, and a zesty homemade honey lemon salad dressing.

When strawberry season hits, all we want to eat is strawberries. We’ll put them in anything: brownies, cinnamon rolls, and of course, fruit salad. But when we want something a little less sweet, we make this show-stopping salad. Cucumber, tomato, and feta are a classic Mediterranean salad combo — and since tomato is technically a fruit, we thought, why couldn’t we use fresh, ripe strawberries instead?

The combination of the refreshing cucumbers and mint with the touch of sweetness from the strawberries and zing of the dressing really sings. It’s a light and healthy lunch on it’s own, or makes a fantastic summer dinner served alongside grilled meat. And if you’re lucky enough to have a garden full of cucumbers and mint, this recipe is a great way to use up your backyard bounty.
