Quinoa Pizza Bites

Recently I have learned that if I “pizza-fy” just about anything I can get my family to eat it. Even if that anything is the notoriously healthy quinoa. Actually quinoa takes quite well to the addition of classic pizzeria spices like garlic and oregano, and there’s no way you can go wrong by adding mozzarella and pizza sauce to anything. Baking these in a muffin tin makes them quick and easy guilt free snacks to grab on the run, or while hungry tummies wait impatiently for dinner to get onto the table. Have fun with the spices and feel free to add chili flakes, dried herbs, or any of your favorite pizza toppings!

 1 cup uncooked quinoa (I used tricolor but any works)

2 sausages, cooked and sliced or crumbled (I used spicy Italian)

1/4 cup chopped onions, cooked

2 eggs

1 cup shredded mozzarella

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon dried oregano

pizza sauce, to serve

  1. Place quinoa in a pot with a lid with 2 cups of water. Bring to a boil, cover, lower the heat to a simmer and allow to cook for 20 minutes or until all the water is soaked up.
  2. Preheat oven to 350° F. Spray a muffin tin with non stick spray.
  3. Mix together the remaining ingredients except for the pizza sauce in a large bowl. Scoop the quinoa mixture into the muffin tins filling them. Gently press down on them to pack them in.
  4. Bake for 20 minutes and allow to cool for 10 minutes before removing from the pan and topping with pizza sauce and serving.
