How to Make Mini Corn Dogs in Your Mini Muffin Tin

The only thing that screams easy summertime eating more than a hot dog? A corn dog! Still, while they might be easy to eat, corn dogs can get a little messy and even a little tricky to make. So what to do if you and your kids get a craving? Making these mini corn dog muffins! They’re fun and totally delicious, and your family will have fun making them together and eating them together. MINI CORN DOG MUFFINS

Makes 36 mini muffins

INGREDIENTS

  • ½ cup stone-ground yellow cornmeal
  • ½ cup all-purpose flour
  • 3 tablespoons sugar
  • ½ heaping teaspoon fine salt
  • ½ teaspoon baking soda
  • 2 large eggs
  • 1 cup buttermilk
  • 3 tablespoons butter, melted
  • Eight 6-inch all-beef hot dogs, ends trimmed, cut into fifths
  • 3 tablespoons dill pickle relish
