Mom-of-3 Who Lost 125 Pounds with Instant Pot Shares Some of Her Go-To Recipes

Now that the holiday season is over, many people are making resolutions to lose weight, eat healthier, or something along those lines.

One mom of 3, Brittany Williams, had a goal to lose weight, and she didn’t give up. In 2017, she decided to get serious about her weight loss. On the website for her new cookbook, “Instant Loss,” she shares, “I lost 55 pounds in 4 months and went on to lose 125 pounds within a year!”

Williams didn’t do any strict starvation diet or super intense exercise routine. No, the key to her success was cooking all of her food at home instead of eating out. She did this for an entire year.

You could be thinking that sounds very time consuming. You could be wondering how a busy mom with 3 children could manage to find the time to cook every single meal she ate for an entire year.

Williams has her Instant Pot to thank for a lot of her success. (Thus, the name for her cookbook, “Instant Success.” Get it?) At first she was intimidated by her Instant Pot, but after a successful attempt making brown rice, she “quickly discovered that all of my crockpot meals could be converted to pressure cooker recipes and instead of hours, cooking them in the Instant Pot took minutes.” 

She shares that she used to pull out a frozen pizza when she was running out of time to make dinner, but she doesn’t do that anymore thanks to her Instant Pot. “I can throw a few things in the pot and have dinner on the table in under a half hour.” 

While cooking dinner in a half-hour may sound good, she created easy and delicious go-to recipes that take as little as one minute to cook in her Instant Pot. No joke. Just one minute. 

We’re pretty sure we couldn’t even order take out in just one minute. Cooking an entire meal in that amount of time sounds almost too good to be true, but it’s not. Williams shared some of her favorite quick, easy and delicious recipes on The Today Show. Judging from the reactions of the faces of the co-hosts, these recipes really do taste good.

Williams proves that you can eat carbs and lose weight too. Two of the recipes she shared were for spaghetti with meat sauce and a blueberry breakfast cake. This sounds like our kind of diet!

Williams even created sneaky ways to get her kids to eat more veggies by hiding veggies in their popsicles. She promises you won’t even taste it.
